Pía León is one of the most influential figures in Peruvian cooking. A Le Cordon Bleu graduate, she rose to head chef at Central before opening Kjolle, her most personal project, which celebrates Peru's biodiversity through color, texture, and place. In 2021 she was named World's Best Female Chef. Much of her work connects to Mater Iniciativa, the research center documenting native ingredients and traditional knowledge that shapes the menus at Central, Kjolle, and MIL.
